Sweet Potato Toast with Spinach Basil Pesto
Ingredients
- Sweet potato
- 1 cup fresh basil leaves
- 2 cups baby spinach leaves
- 1/3 cup olive oil
- 1/2 cup Parmesan cheese or 1/3 cup nutritional yeast
- 1/2 cup cashew nuts or other preferred nuts
- 1/2 teaspoon chopped garlic
- Salt and black pepper to taste
- Water or almond milk as needed for consistency
Preparation
Slice the sweet potato as thinly as possible.
Toast the slices in a toaster on low to medium setting for 6 to 8 minutes until they start browning.
While waiting for the sweet potato to toast, make the pesto by blending all the ingredients in a Nutribullet.
Serve with chili flakes or whatever topping you fancy.
