Sweet Potato Toast with Spinach Basil Pesto

Ingredients

  • Sweet potato
  • 1 cup fresh basil leaves
  • 2 cups baby spinach leaves
  • 1/3 cup olive oil
  • 1/2 cup Parmesan cheese or 1/3 cup nutritional yeast
  • 1/2 cup cashew nuts or other preferred nuts
  • 1/2 teaspoon chopped garlic
  • Salt and black pepper to taste
  • Water or almond milk as needed for consistency

Preparation

  1. Slice the sweet potato as thinly as possible.

  2. Toast the slices in a toaster on low to medium setting for 6 to 8 minutes until they start browning.

  3. While waiting for the sweet potato to toast, make the pesto by blending all the ingredients in a Nutribullet.

  4. Serve with chili flakes or whatever topping you fancy.
