Vegan Gluten-Free Buckwheat Crepes Breakfast

Ingredients

  • 1 cup un-toasted (raw) buckwheat flour
  • 3/4 Tbsp flaxseed meal
  • 1 3/4 cups light (canned) coconut milk
  • 1 pinch sea salt
  • 1 Tbsp avocado or melted coconut oil
  • 1/8th tsp ground cinnamon
  • sweetener (optional)

Preparation

  1. Mix all of the ingredients together in a bowl.

  2. Cook on a heated pan lightly on each side.

  3. Get creative with your toppings and enjoy.
