Guacamole Stuffed Sweet Potatoes
Ingredients
- 2 medium sweet potatoes
- 1 ripe avocado
- 1 teaspoon of lime juice
- 1/2 teaspoon of garlic powder
- salt and pepper to taste
- 1/8 cup of onion (or more to taste)
- 1/4 cup of tomato (more or less to taste)
- 2 tablespoons of cilantro, chopped
- 1/2 cup of black beans
Preparation
Bake the sweet potatoes at 200°C for about 45 minutes or until soft.
Mash the avocado in a bowl and mix with lime juice, garlic powder, salt, and pepper.
Add chopped onion, tomato, cilantro, and black beans to the avocado mixture and stir well.
Cut open the baked sweet potatoes and stuff them with the guacamole mixture.
