Baked Garlic Thyme Potato Fries with Vegan Avocado Lime Sauce

Ingredients

  • Potatoes
  • Salt
  • Black pepper
  • Garlic powder
  • Dried thyme
  • Corn starch
  • Oil (for drizzling)
  • Vegan Turkish yoghurt
  • Ripe avocado
  • Cilantro
  • Lime juice
  • Water
  • Optional: Sweet potatoes (for variation)

Preparation

  1. Peel the potatoes and parboil them until just soft.

  2. Drain the water and let the potatoes cool slightly.

  3. Preheat the oven to 220°C (430°F).

  4. Cut the potatoes into wedges and place them in a bowl.

  5. Add salt, black pepper, garlic powder, dried thyme, and 1 tbsp corn starch to the potatoes. Mix together.

  6. Place the seasoned potato wedges on baking trays lined with parchment paper. Drizzle oil over them.

  7. Bake in the preheated oven for about 25-30 minutes, rotating the fries after half the time.

  8. While the fries are baking, prepare the sauce by blending vegan Turkish yoghurt, ripe avocado, cilantro, lime juice, a little garlic powder, salt, pepper, and water in a food processor until smooth and desired consistency.

  9. Once the fries are golden and crispy, remove them from the oven.

  10. Serve the baked potato fries with the vegan avocado lime sauce.
