Vegan Avocado Mayonnaise with Baked Vegetables

Ingredients

Avocado mayonnaise

  • 1 ripe avocado, peeled and pitted
  • 6 Tbsp vegetable oil
  • 1 cup hot water
  • Juice of one lemon
  • Salt and pepper to taste
  • 1 jalapeño (optional)

Baked vegetables

  • sweet potatoes
  • carrots
  • avocado oil
  • salt
  • pepper
  • paprika
  • garlic powder
  • onion powder
  • cayenne pepper

Preparation

  1. Blend all avocado mayonnaise ingredients until smooth and creamy, adjusting oil, water, salt, and pepper if needed.

  2. Season sweet potato wedges and carrots with salt, pepper, paprika, garlic powder, onion powder, and cayenne.

  3. Roast the vegetables with avocado oil on parchment paper until crispy, or use an air fryer.
