Vegan Baked Potato Wedges with Avocado Dip

Ingredients

Potato wedges

  • potatoes
  • oil
  • salt
  • smoked paprika
  • garlic powder

Avocado dip

  • 1 avocado
  • handful of cherry tomatoes
  • cilantro
  • chili flakes
  • salt
  • 1 clove of garlic
  • juice of half a lemon

Preparation

  1. Preheat the oven to 225°C/435°F.

  2. Cut the potatoes into wedges.

  3. Mix the potato wedges in a bowl with oil, salt, smoked paprika, and garlic powder.

  4. Pour the potato wedges onto a lined baking sheet and bake for 25 minutes.

  5. Blend 1 avocado, a handful of cherry tomatoes, cilantro, chili flakes, salt, 1 clove of garlic, and the juice of half a lemon until smooth.
