Vegan Burger Patties with Quinoa and Beans
Ingredients
- 3 cups cooked quinoa
- 3 cans black beans (drained and rinsed)
- 1 cup oat flour (blend whole oats until flour)
- 3 chia eggs (3 tablespoons chia with 9 tablespoons water)
- 1 large red bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 handfuls spinach
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne
- 1/2 teaspoon turmeric
- avocado oil or olive oil for sautéing
Dressing
- lemon juice
- olive oil
- salt
- pepper
Preparation
Sauté the onions, bell pepper, and garlic with avocado oil or olive oil.
Blend all ingredients except for the oat flour and cooked quinoa.
Pour the mixture into a bowl and add the oat flour and quinoa, combining well.
Grease a baking sheet with parchment paper.
Form the mixture into patties, using plastic gloves or bags to avoid sticking.
Bake the patties in a 375°F oven for 20 minutes on each side.
For the dressing, mix lemon juice, olive oil, salt, and pepper to taste.
Enjoy the burgers with arugula, bulgur wheat, cucumbers, avocado, and garnished with cilantro.
