Homemade Vegetable Seasoning Blend

Ingredients

  • 3 carrots
  • 2 onions
  • 3 green bell peppers
  • 2 red bell peppers
  • 4 garlic cloves
  • 5 celery stalks and desired amount of leaves
  • Half bunch parsley
  • 4 tablespoons salt
  • 1 teaspoon whole black pepper

Preparation

  1. Wash and dry all vegetables thoroughly.

  2. Chop them coarsely.

  3. Process in a food processor.

  4. Spread on a baking sheet lined with parchment paper.

  5. Set the oven to 150°C and prop the door open with a knife, then dry for 2 to 2.5 hours, stirring occasionally.

  6. After drying, process again in the food processor with salt and pepper, leaving it somewhat granular.

  7. Pour the mixture into a container and let it sit in the sun for 2 hours to dry completely.

  8. Store in airtight jars.
