Chicken Fatteh

Ingredients

  • 1 kg chicken, cut into pieces
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 5 cloves garlic, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric

Rice

  • 2 tablespoons olive oil
  • 2 cups Egyptian rice
  • 2 cups water
  • 2 teaspoons salt

Garlic sauce

  • 6 cloves garlic
  • 2 hot red and green chili peppers
  • 1/4 cup lemon juice
  • 1/4 cup olive oil

For serving

  • 1 cup yogurt
  • 2 loaves toasted bread

Preparation

  1. Cook the chicken with onion, garlic, and spices in olive oil until tender

  2. In a separate pot, cook the rice with water and salt until fluffy

  3. Prepare the garlic sauce by mixing garlic, chili peppers, lemon juice, and olive oil

  4. Toast the bread until crisp

  5. Assemble the dish by layering toasted bread, rice, chicken, garlic sauce, and yogurt
