Easy Homemade Chicken Chow Mein

Ingredients

Marinade

  • 2 chicken breasts (approx 450g)
  • 1 tbsp oyster sauce
  • 1 tsp cornflour
  • 1 tbsp water
  • 1 tsp ground Indian five spice (optional)

Sauce

  • 2 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar

Stir-fry components

  • 390g noodles (combined egg and ramen, cooked per package)
  • oil as needed
  • 1 piece ginger, finely chopped
  • 3-4 cloves garlic, finely chopped
  • 1 onion, sliced
  • 1 carrot, julienned
  • 1 piece cabbage, finely sliced
  • 400g beansprouts
  • 3-4 spring onions, roughly chopped
  • half a scotch bonnet pepper (or other hot pepper)

Preparation

  1. Slice the chicken breasts and marinate them with the marinade ingredients for at least 15 minutes. Prepare the vegetables, make the sauce, and cook the noodles according to package instructions.

  2. Heat oil in a wok over high heat, add the marinated chicken, and cook until it changes color and becomes opaque. Remove the chicken and set it aside.

  3. Add more oil to the wok if needed, then stir in the chopped ginger and garlic and cook for about a minute until fragrant.

  4. Add the sliced onion and julienned carrot and stir-fry for a few minutes until slightly softened.

  5. Stir in the finely sliced cabbage, beansprouts, and chopped spring onions and continue cooking.

  6. Return the cooked chicken to the wok, pour in the sauce, and mix everything together.

  7. Add the cooked noodles and scotch bonnet pepper, then toss until well combined and heated through.

  8. Serve immediately.

Tips

  1. Marinating the chicken makes it tender and succulent.

  2. This recipe makes a large portion, so adjust quantities based on your needs.
