Homemade Basic Chicken Broth

Ingredients

  • 1 kg chicken
  • 10 chicken wings
  • 10 cups water
  • 1 large chopped onion
  • 5 garlic cloves
  • 10 parsley stalks
  • 5 thyme sprigs
  • 1 medium chopped carrot
  • 10 cardamom pods
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 piece ginger
  • 2 tablespoons salt
  • 1/4 cup vinegar

Preparation

  1. In a deep pot, place the chicken, wings, and water. Place the pot on high heat. Let the water boil until foam forms on the chicken surface. Use a slotted spoon to remove the foam.

  2. Add the onion, garlic, parsley, thyme, carrot, cardamom, bay leaves, cinnamon, ginger, salt, and vinegar. Let the chicken cook on medium heat for 20 minutes. Cover the pot and reduce the heat. Let the chicken cook for 90 minutes until the water volume decreases.

  3. Remove the chicken from the broth. Let it cool, then remove the skin. Remove the bones from the chicken. Use the chicken in another recipe. Return the bones to the broth.

  4. Let the broth cook for about one hour.

  5. Strain the chicken broth through a fine sieve. Discard the remaining ingredients.

  6. Let the chicken broth cool completely on the kitchen counter, then refrigerate until use.
