Homemade BBQ Chicken Tostadas with Cashew Cheese
Ingredients
- 3 chicken breasts
- salt and pepper
- olive oil
- 1 cup BBQ sauce
- sietefoods grain-free tortillas
- provolone cheese
Cashew cheese sauce
- 1 cup soaked cashews (soak for at least 4 hours or overnight)
- 1 cup water
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
Preparation
Heat a skillet over medium heat. Once hot, add olive oil and 3 chicken breasts seasoned with salt and pepper.
Cook chicken for 7 minutes on each side. Check internal temperature to ensure they are done.
Remove chicken, add to a bowl, and shred with two forks. Split into halves and coat each with 1/2 cup BBQ sauce (total 1 cup needed).
For tostadas, use sietefoods grain-free tortillas. Rub with olive oil and toast in oven at 350°F for 4 minutes to make them crispy.
Remove from oven, add BBQ chicken and cheese (provolone for one version or cashew cheese for the other), then bake for another 6 minutes.
This recipe makes 4 tostadas with leftovers. Remember, it's about compromise in cooking for different preferences.
Cashew cheese sauce making
Combine 1 cup soaked cashews, 1 cup water, 2 tablespoons nutritional yeast, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon sea salt in a food processor.
Purée until smooth. Store in the fridge and reheat when ready to use.
