Homemade BBQ Chicken Tostadas with Cashew Cheese

Ingredients

  • 3 chicken breasts
  • salt and pepper
  • olive oil
  • 1 cup BBQ sauce
  • sietefoods grain-free tortillas
  • provolone cheese

Cashew cheese sauce

  • 1 cup soaked cashews (soak for at least 4 hours or overnight)
  • 1 cup water
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt

Preparation

  1. Heat a skillet over medium heat. Once hot, add olive oil and 3 chicken breasts seasoned with salt and pepper.

  2. Cook chicken for 7 minutes on each side. Check internal temperature to ensure they are done.

  3. Remove chicken, add to a bowl, and shred with two forks. Split into halves and coat each with 1/2 cup BBQ sauce (total 1 cup needed).

  4. For tostadas, use sietefoods grain-free tortillas. Rub with olive oil and toast in oven at 350°F for 4 minutes to make them crispy.

  5. Remove from oven, add BBQ chicken and cheese (provolone for one version or cashew cheese for the other), then bake for another 6 minutes.

  6. This recipe makes 4 tostadas with leftovers. Remember, it's about compromise in cooking for different preferences.

Cashew cheese sauce making

  1. Combine 1 cup soaked cashews, 1 cup water, 2 tablespoons nutritional yeast, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon sea salt in a food processor.

  2. Purée until smooth. Store in the fridge and reheat when ready to use.
