One-Pot Chicken and Vegetable Pasta
Ingredients
- 3 tablespoons corn oil
- 2 stalks green onion, chopped
- 3 cloves garlic, crushed
- 2 pieces chicken breast fillet, cut into small cubes
- 1 medium sweet red bell pepper, finely chopped
- 1 medium sweet green bell pepper, finely chopped
- 1 medium sweet yellow bell pepper, finely chopped
- 4 large tomatoes, peeled and finely chopped
- 2 chili peppers, finely chopped
- 1 large carrot, grated
- 1 cup mushrooms, chopped
- 2 tablespoons tomato paste
- 1/2 cup green basil, chopped
- 2 sprigs rosemary
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon crushed hot pepper
- 1/2 teaspoon black pepper
- 2 teaspoons salt
- 1 teaspoon oregano
- 1 packet finger pasta
- 1/2 cup grated Parmesan cheese
- 2 tablespoons parsley
Preparation
In a large pot, heat the oil, add the onion and garlic and stir until wilted.
Add the chicken, sprinkle the spices and cook on medium heat for about 6 minutes.
Add the bell peppers of all types and stir with the chicken.
Add the spices, tomatoes, carrot, mushrooms, tomato paste, basil or rosemary.
Add 4 cups of water, stir the ingredients together then let it come to a boil.
Add the pasta, cover the pot and leave it on medium heat for about 10 minutes, checking the pasta doneness from time to time and adding more water until it cooks.
Sprinkle the cheese then the parsley over the pasta and serve it hot.
