Baked Macaroni with Curry and Cheese

Ingredients

  • 2 cups macaroni
  • 500 g ground meat
  • 3 tablespoons curry powder
  • A little corn oil and a little butter for sautéing
  • 1 can evaporated milk
  • 1 can water
  • Optional: a little spring onions
  • A little fried shallots
  • 4 eggs
  • Salt to taste
  • A little grated mozzarella or cheddar cheese

Pounded spices

  • 5 shallots
  • 3 garlic cloves
  • 1 tablespoon black pepper
  • 1/2 inch ginger

Preparation

  1. Pound the shallots, garlic, black pepper, and ginger together to make a paste.

  2. Boil the macaroni until soft, then drain and place in a clean container.

  3. Sauté the pounded spice paste with the curry powder until fragrant.

  4. Add the ground meat and cook until done, seasoning with salt.

  5. Add the evaporated milk, water, and fried shallots, then cook briefly.

  6. Add the cooked meat mixture to the macaroni and mix well.

  7. Optionally, add grated cheddar cheese and mix.

  8. Transfer the mixture to a baking dish.

  9. Beat the eggs in a bowl.

  10. Pour the beaten eggs over the macaroni mixture and sprinkle with mozzarella and any remaining cheese.

  11. Sprinkle with spring onions and fried shallots.

  12. Bake in a preheated oven at 170°C for 40 minutes or until cooked.

Tips

  1. You can add bell peppers, mushrooms, and diced tomatoes for extra flavor.
