Chickpea Peanut Stew

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/4 cup red lentils
  • 1 tbsp minced garlic
  • 1 tsp ginger
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 2 cups cubed sweet potato
  • 1/3 cup chunky peanut butter
  • 1 bunch chopped collards
  • 1 red onion chopped
  • 3 cups vegetable broth
  • Salt and pepper to taste

Preparation

  1. In a large pot, add onions and sauté for 3 minutes on medium heat

  2. Add in garlic, ginger, cumin and smoked paprika, allowing seasoning to become fragrant

  3. Add in chickpeas, lentils, and tomato paste, and fold into onions and seasoning

  4. Add in veggie broth and peanut butter, give mixture a good stir to mix everything evenly and bring pot to a boil

  5. Reduce heat to a simmer and cover lid, cooking for 20 minutes or until sweet potatoes are cooked all the way through

  6. Give stew a stir before serving and I highly recommend adding some hot sauce or red pepper flakes for this for a special kick in flavor
