Creamy Heart of Palm Pie
Ingredients
Dough
- 3 cups all-purpose flour
- 150 g butter or margarine
- 1 egg yolk
- 1 container plain yogurt
- 1 teaspoon salt
- 1 egg yolk (for brushing)
Filling
- 3 tablespoons olive oil
- 1 onion, chopped
- 1 tomato, chopped
- 1 large jar heart of palm, drained
- 1/2 cup pitted olives
- 1 can peas, drained
- 1/2 cup chopped parsley and scallions
- 1 container cream cheese spread
- 1 tablespoon all-purpose flour
- Salt and pepper to taste
Preparation
Filling
Heat the olive oil in a pan and sautΓ© the onion
Add the chopped tomato and fry
Add the heart of palm, peas, olives, salt, and pepper
Cook for a few minutes
Stir in the cream cheese spread, parsley, scallions, and flour
Cook for a few more minutes
Transfer to a container and set aside
Dough
In a bowl, combine the flour (reserving a little), butter or margarine, salt, egg yolk, and yogurt
Mix with your hands (use the reserved flour if needed to achieve the right consistency)
Cover with a cloth and let rest for about 10 minutes
Assembly and baking
Preheat the oven to 375Β°F (190Β°C)
Roll out the dough and line a 9-inch pie dish
Pour the filling into the crust
Cover with the remaining dough, crimping the edges to seal
Brush the top with the reserved egg yolk
Bake for 35 minutes or until the crust is golden brown
