Creamy Brazilian Chicken Croquettes

Ingredients

Dough

  • 300 ml whole or plant-based milk
  • 1 tablespoon butter
  • 2 teaspoons salt
  • 1 1/2 cups rice flour or oat flour

Chicken filling

  • 1 cooked and shredded chicken breast
  • 1 chopped onion
  • 2 minced garlic cloves
  • a drizzle of olive oil
  • 3 tablespoons tomato paste
  • chopped parsley to taste
  • salt to taste

Creamy cheese

  • 200 grams creamy cheese (requeijΓ£o)

Breading

  • 100 ml milk
  • breadcrumbs or flaxseed meal, for coating

Preparation

Dough

  1. Add milk, salt, and butter to a saucepan and bring to a boil

  2. When boiling, add rice flour or oat flour and stir well for 4 minutes

  3. Transfer the dough to a work surface and knead for 2 minutes

Chicken filling

  1. SautΓ© garlic and onion in a saucepan until golden

  2. Add tomato paste and stir well

  3. Add shredded chicken, salt to taste, and parsley; stir well and set aside

Assembly

  1. Take a piece of dough, flatten it, add 2 tablespoons of chicken filling and 1 tablespoon of creamy cheese, then seal to form a croquette

Breading and cooking

  1. Dip the croquettes in milk and then in breadcrumbs or flaxseed meal

  2. Air fry for approximately 25 minutes until golden and crispy
