Creamy Brazilian Chicken Croquettes
Ingredients
Dough
- 300 ml whole or plant-based milk
- 1 tablespoon butter
- 2 teaspoons salt
- 1 1/2 cups rice flour or oat flour
Chicken filling
- 1 cooked and shredded chicken breast
- 1 chopped onion
- 2 minced garlic cloves
- a drizzle of olive oil
- 3 tablespoons tomato paste
- chopped parsley to taste
- salt to taste
Creamy cheese
- 200 grams creamy cheese (requeijΓ£o)
Breading
- 100 ml milk
- breadcrumbs or flaxseed meal, for coating
Preparation
Dough
Add milk, salt, and butter to a saucepan and bring to a boil
When boiling, add rice flour or oat flour and stir well for 4 minutes
Transfer the dough to a work surface and knead for 2 minutes
Chicken filling
SautΓ© garlic and onion in a saucepan until golden
Add tomato paste and stir well
Add shredded chicken, salt to taste, and parsley; stir well and set aside
Assembly
Take a piece of dough, flatten it, add 2 tablespoons of chicken filling and 1 tablespoon of creamy cheese, then seal to form a croquette
Breading and cooking
Dip the croquettes in milk and then in breadcrumbs or flaxseed meal
Air fry for approximately 25 minutes until golden and crispy
