Peanut and Soy Free Zucchini Noodle Pad Thai

Ingredients

  • 1 package Trader Joe's Broccoli Slaw
  • 1/4 red cabbage, chopped
  • 2 zucchini, spiralized
  • Handful of shiitake mushrooms, sliced
  • 1 garlic clove, minced
  • 1 tablespoon avocado oil
  • Bok choy
  • Crushed raw cashews
  • Sesame seeds

Sunflower sesame sauce

  • 1 tablespoon sunflower butter
  • 1 tablespoon sesame oil
  • 1/2 tablespoon coconut aminos
  • Sea salt

Preparation

  1. Add garlic and avocado oil to a grill pan and sauté.

  2. Add broccoli slaw, red cabbage, mushrooms, and bok choy and toss on low heat for about 5-6 minutes

  3. Meanwhile, blend the sauce ingredients in a food processor.

  4. Add the zucchini noodles, the slaw mixture, and the sauce to a large bowl and toss to combine.

  5. Top with crushed raw cashews and sesame seeds.
