Peanut and Soy Free Zucchini Noodle Pad Thai
Ingredients
- 1 package Trader Joe's Broccoli Slaw
- 1/4 red cabbage, chopped
- 2 zucchini, spiralized
- Handful of shiitake mushrooms, sliced
- 1 garlic clove, minced
- 1 tablespoon avocado oil
- Bok choy
- Crushed raw cashews
- Sesame seeds
Sunflower sesame sauce
- 1 tablespoon sunflower butter
- 1 tablespoon sesame oil
- 1/2 tablespoon coconut aminos
- Sea salt
Preparation
Add garlic and avocado oil to a grill pan and sauté.
Add broccoli slaw, red cabbage, mushrooms, and bok choy and toss on low heat for about 5-6 minutes
Meanwhile, blend the sauce ingredients in a food processor.
Add the zucchini noodles, the slaw mixture, and the sauce to a large bowl and toss to combine.
Top with crushed raw cashews and sesame seeds.
