Refreshing Low Carb and Oil-Free Zoodles

Ingredients

  • 1 zucchini, spiralized
  • ~ 3 chopped tomatoes
  • ~ 1/2 small red bell pepper
  • ~ 1 tablespoon chopped
  • ~ 1/2 clove garlic
  • ~ 1 shallot/pearl onion
  • ~ a handful of cilantro (optional)
  • ~ 1 tablespoon cashew parmesan cheese/nutritional yeast (this is not raw, but gives you the cheesy flavor, omit if you can't have this)
  • ~ salt, black pepper to taste
  • ~ chili pepper flakes

Preparation

  1. Keep spiralized zucchini in the refrigerator while you work on the sauce

  2. Blend together tomatoes, bell pepper, carrot, garlic, pearl onion, cilantro, and cashew cheese (if using) in a blender (pulse few times until well combined). Season with salt and black pepper. Pour sauce on your zoodles, garnish with additional chopped bell peppers, chili flakes and black pepper before serving. Serve cold
