Tomato and Pepper Meze
Ingredients
- 2 tbsp olive oil
- 1 diced onion
- 3 cloves of garlic, sliced
- 1/2 tsp salt (add to taste)
- 1/2 tsp paprika
- 1 tsp dried parsley
- pinch of ground black pepper
- 2 tomatoes, diced
- 1/2 - 1 red bell pepper, diced
- 1 tbsp tomato puree
- water as needed
Preparation
Heat olive oil in a pan, add the onion and garlic and salt, saute for a few minutes until translucent
Add the spices and saute for 2 minutes
Lastly, add the diced tomatoes, pepper and tomato puree, if the dish seems dry add a splash of water to loosen, mix well and simmer over a gentle heat until everything is cooked through and soft
Serve hot or cold alongside your main meals, refrigerate to keep fresh and use within 2-3 days
