Tomato and Pepper Meze

Ingredients

  • 2 tbsp olive oil
  • 1 diced onion
  • 3 cloves of garlic, sliced
  • 1/2 tsp salt (add to taste)
  • 1/2 tsp paprika
  • 1 tsp dried parsley
  • pinch of ground black pepper
  • 2 tomatoes, diced
  • 1/2 - 1 red bell pepper, diced
  • 1 tbsp tomato puree
  • water as needed

Preparation

  1. Heat olive oil in a pan, add the onion and garlic and salt, saute for a few minutes until translucent

  2. Add the spices and saute for 2 minutes

  3. Lastly, add the diced tomatoes, pepper and tomato puree, if the dish seems dry add a splash of water to loosen, mix well and simmer over a gentle heat until everything is cooked through and soft

  4. Serve hot or cold alongside your main meals, refrigerate to keep fresh and use within 2-3 days
