Raw Pad Thai Salad
Ingredients
- 1/2 small red cabbage
- 150g bean sprouts
- 2 large carrots
- 2 sprigs spring onion
- 1 red chilli
- 1 lime to serve
- 1 tbsp crushed peanuts
Sauce
- 2 tbsp creamy peanut butter
- 1 tsp tahini
- 1-2 tbsp tamari
- 3 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 1 lime, juiced
- Water to loosen
Preparation
Spiralize the carrots and slice the red cabbage to a noodle size and add them to a big salad bowl with the bean sprouts.
Slice the spring onions and chilli finely, and add them to the bowl.
Mix all the dressing ingredients together separately, adding the water at the end to reach the desired consistency.
Pour the dressing over the bean sprouts, carrot and cabbage and massage it in gently.
Serve and top with crushed peanuts and a squeeze of lime.
