Massaged Kale Salad
Ingredients
- 1 bunch curly kale, rinsed and de-stemmed
- 2 tbsp tahini
- Juice of one lemon
- Zest of one lemon
- 1 can chickpeas, rinsed and drained
- 1 cup cooked quinoa
- 2 medium carrots, diced
- 1 tbsp capers, minced
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Preparation
In a medium bowl, add kale, tahini, lemon juice, lemon zest, seasonings and a pinch of salt over top the greens
With your hands massage kale, kneeding the mixture into your greens until kale softens and turns a brilliant green color (massaging the kale helps breakdown the fibers and bitterness behind the kale)
Once kale is shrunken down, add remaining ingredients and combine until fully incorporated
Taste and adjust seasonings based on your preference
Makes 1-2 generous servings based on your hunger level
