Mediterranean Couscous Salad for One
Ingredients
Couscous salad
- handful fresh kale
- sliced cherry tomatoes
- diced cucumber
- 1/2 cup Israeli pearl couscous (cooked)
- 1/2 cup chickpeas
- 1 tbsp hemp hearts
Dressing
- 1 tbsp tahini
- juice from 1/2 lemon
- smoked paprika
- umami seasoning (Trader Joe’s)
- salt & pepper
Preparation
Mix all the salad ingredients and dressing ingredients together to create the couscous salad and enjoy the Israeli-inspired flavors with plant protein.
