Mediterranean Couscous Salad for One

Ingredients

Couscous salad

  • handful fresh kale
  • sliced cherry tomatoes
  • diced cucumber
  • 1/2 cup Israeli pearl couscous (cooked)
  • 1/2 cup chickpeas
  • 1 tbsp hemp hearts

Dressing

  • 1 tbsp tahini
  • juice from 1/2 lemon
  • smoked paprika
  • umami seasoning (Trader Joe’s)
  • salt & pepper

Preparation

  1. Mix all the salad ingredients and dressing ingredients together to create the couscous salad and enjoy the Israeli-inspired flavors with plant protein.
