Sweet Potato Fries with Garlic Hummus

Ingredients

  • sweet potatoes
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 can drained and rinsed chickpeas
  • 3 tbsp tahini
  • juice of 1 lemon
  • 1 large clove of garlic
  • 1/2 tsp salt
  • 1/4 cup water or olive oil

Preparation

  1. Slice the sweet potato fries.

  2. Toss them in 1 teaspoon each of smoked paprika and garlic powder.

  3. Bake for 25 minutes at 450 degrees Fahrenheit.

  4. For the hummus, blend 1 can of drained and rinsed chickpeas, 3 tablespoons of tahini, juice of 1 lemon, 1 large clove of garlic, 1/2 teaspoon salt, and 1/4 cup of water or olive oil until smooth, adding more liquid as needed.
