Quick and Easy Miso Soup

Ingredients

  • 4 cups vegetable broth
  • 1 tablespoon white miso
  • 2 tablespoons minced ginger
  • 2 cloves garlic
  • 1-2 tablespoons light soy sauce
  • 1/2 block firm tofu
  • 2 stalks green onion whites, chopped

Optional

  • Thin carrot coins
  • Noodles

Preparation

  1. In a small pot, boil the stock, miso, garlic, 1 tablespoon soy sauce, ginger, and white ends of green onions for 10 minutes.

  2. Add the tofu cubes and green onion tops to the serving bowls.

  3. Strain the broth through a fine mesh strainer.

  4. Pour the strained broth back into the pot and add 1-2 cups water to thin.

  5. Taste and add more soy sauce as desired.

  6. Bring the broth back to a boil.

  7. Pour the broth into the bowls over the tofu and green onions.

  8. Enjoy immediately.

Tips

  1. Add carrots and noodles to the bowl before pouring the broth over them if using.

  2. Straining the broth removes foam and boiled white parts of the onion, resulting in a golden and translucent broth.

  3. This soup can be enjoyed on its own or as a meal starter to warm up your palate.
