Quick and Easy Vegan Corn Chowder

Ingredients

  • 1 tbsp olive oil
  • 1 small onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 2 cups frozen corn kernels
  • 2 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste

Garnish

  • Chopped fresh parsley

Preparation

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic; sauté until softened and fragrant.

  3. Stir in red bell pepper and corn kernels; cook for a few minutes until vegetables begin to soften.

  4. Pour in vegetable broth, smoked paprika, and ground cumin; bring to a simmer and cook for about 10-15 minutes.

  5. Add unsweetened almond milk and heat through without boiling.

  6. Season with salt and pepper to taste.

  7. Garnish with chopped fresh parsley before serving.
