Quick and Easy Vegan Corn Chowder
Ingredients
- 1 tbsp olive oil
- 1 small onion
- 2 cloves garlic
- 1 red bell pepper
- 2 cups frozen corn kernels
- 2 cups vegetable broth
- 1 cup unsweetened almond milk
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
Garnish
- Chopped fresh parsley
Preparation
Heat olive oil in a large pot over medium heat.
Add onion and garlic; sauté until softened and fragrant.
Stir in red bell pepper and corn kernels; cook for a few minutes until vegetables begin to soften.
Pour in vegetable broth, smoked paprika, and ground cumin; bring to a simmer and cook for about 10-15 minutes.
Add unsweetened almond milk and heat through without boiling.
Season with salt and pepper to taste.
Garnish with chopped fresh parsley before serving.
