Spicy Plant-Based "Beef" Pasta Bake

Ingredients

  • 2 medium brown onions, sliced and caramelized
  • @movingmountainsfoods plant-based beefless strips (pan-fried)
  • 120g Spirali pasta (cooked)
  • 6 x @thelaughingcow_uk extra light cheese triangles
  • 1 x @oxo meat-free beef flavour stock cube
  • 1 x @kallo umami cube
  • 1 tsp cajun seasoning
  • 1/4 tsp black onion seeds
  • 1/2 tbsp @marmite Dynamite chilli
  • Grated mozzarella
  • @hellmannsuk chilli and garlic sauce
  • Salad

Preparation

  1. Caramelize the sliced onions: In a pan with a lid on, fry the sliced brown onions slowly for 25 minutes until caramelized. Set aside.

  2. Prepare the beefless strips: Pan-fry the plant-based beefless strips from @movingmountainsfoods.

  3. Cook the pasta: Boil the Spirali pasta for 6 minutes in boiling water, then drain, reserving a little pasta water.

  4. Prepare the cheesy sauce: In the same pan used for the onions, add the cooked pasta water, @thelaughingcow_uk cheese triangles, @oxo meat-free beef flavour stock cube, @kallo umami cube, cajun seasoning, black onion seeds, and @marmite Dynamite chilli. Stir until the sauce thickens.

  5. Combine ingredients: Add the plant-based beefless strips and caramelized onions to the cheesy sauce. Stir to combine.

  6. Assemble and bake: Transfer the mixture to an oven dish and top with grated mozzarella.

  7. Bake: Bake the pasta dish in the oven for 10 minutes until the cheese is melted and bubbly.

  8. Serve: Drizzle with @hellmannsuk chilli and garlic sauce and serve with a side salad.
