Stuffed Sweet Potato with Quinoa and Tahini
Ingredients
- 1 sweet potato
- Fresh spinach
- Leftover tricolor quinoa
- 1 tablespoon tahini
- 1 tablespoon coconut aminos or soy sauce and maple syrup
- Juice of 1/2 lemon
- Sriracha to taste
Preparation
Microwave the sweet potato for 4 minutes.
Flip the sweet potato and microwave for another 3 minutes.
Mix 1 tablespoon tahini, 1 tablespoon coconut aminos, juice from half a lemon, and sriracha to make the sauce.
Cut open the sweet potato.
Stuff it with leftover quinoa and fresh spinach.
Pour the sauce over the stuffed sweet potato.
