Stuffed Sweet Potato with Quinoa and Tahini

Ingredients

  • 1 sweet potato
  • Fresh spinach
  • Leftover tricolor quinoa
  • 1 tablespoon tahini
  • 1 tablespoon coconut aminos or soy sauce and maple syrup
  • Juice of 1/2 lemon
  • Sriracha to taste

Preparation

  1. Microwave the sweet potato for 4 minutes.

  2. Flip the sweet potato and microwave for another 3 minutes.

  3. Mix 1 tablespoon tahini, 1 tablespoon coconut aminos, juice from half a lemon, and sriracha to make the sauce.

  4. Cut open the sweet potato.

  5. Stuff it with leftover quinoa and fresh spinach.

  6. Pour the sauce over the stuffed sweet potato.
