Vegan Cheezy Broccoli Chickpea Patties

Ingredients

  • 2 tablespoons flaxseed meal
  • 6 tablespoons water
  • 2 heads broccoli
  • 1 1/3 cups chickpea flour
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 cup cooked chickpeas
  • Optional: water to adjust consistency

Preparation

  1. Make flax eggs by mixing 2 tablespoons flaxseed meal with 6 tablespoons water and let sit for 10-15 minutes.

  2. Steam 2 heads of broccoli until just fork tender and chop into small pieces.

  3. In a large bowl, mix 1 1/3 cups chickpea flour, 1/4 cup nutritional yeast, 1/2 teaspoon garlic powder, 1 teaspoon salt, the chopped broccoli, 1/2 cup cooked chickpeas, and the flax eggs by hand until a dough forms. Add a little water if the mixture is too dry.

  4. Form the mixture into about 6 patties.

  5. Bake the patties on a lined baking sheet at 400°F/200°C until golden brown, about 15-20 minutes, flipping halfway through.

  6. Serve with guacamole.
