Water Bath Chocolate Cheesecake

Ingredients

Base

  • 250g chocolate biscuits
  • 50g coconut oil or butter

Cheese mixture

  • 1kg cream cheese
  • 4 eggs
  • 100g sugar
  • 50g potato starch
  • 100g milk chocolate
  • 200ml heavy cream

Cream topping

  • 300ml heavy cream
  • 20g sugar
  • 1 teaspoon gelatin
  • 1 tablespoon water

Chocolate glaze

  • 4 chocolate bars
  • 1 tablespoon milk

Preparation

  1. Crush the biscuits and mix with melted fat, then press into the bottom of a silicone mold with a diameter of 23cm

  2. Melt chocolate in cream and set aside to cool, while mixing cheese with eggs, starch, and sugar until combined, then add the chocolate mixture and pour over the base

  3. Preheat oven to 180°C, place the silicone mold in a larger pan, pour boiling water into the larger pan until it reaches halfway up the mold sides

  4. Bake until water boils, about 10 minutes, then reduce temperature to 150°C and bake for 50 minutes, totaling 60 minutes in the oven

  5. Turn off the oven, slightly open the door, and leave the cheesecake inside until the water cools, then remove and refrigerate overnight to cool completely

  6. After chilling, remove cheesecake from mold and prepare the cream by soaking gelatin in water, whipping cream with sugar, heating gelatin, adding it to the whipped cream, and spreading over the top

  7. For the glaze, melt chocolate with milk and spread over the cream topping

  8. Chill for at least 30 minutes before serving

Tips

  1. Place the silicone mold inside a larger pan before adding the base and cheese mixture to ensure proper water bath setup
