Banana Mini Muffins

Ingredients

  • 1/2c banana muffin & bread almond flour mix
  • • 2 flax eggs (2T of ground flax seeds mixed with 6T of water; leave in fridge to thicken for ~25min)
  • • 2T almond butter (I uses raw creamy almond butter)
  • • 1/4tsp cinnamon
  • • 1/4tsp baking powder
  • • Vegan chocolate chips

Preparation

  1. Prep the flax egg first because that takes the longest to set

  2. Once the vegan egg has thickened, stir in the almond butter

  3. Mix in all remaining dry ingredients to create your “dough”

  4. Spray a muffin tin with coconut oil and add the mix (i did not have parchment paper for cookies, and i like how fluffy they turn out this way)

  5. Bake @ 350° for 12min (i added the chocolate chips on top before baking)
