Blueberry Zucchini Mini Muffins

Ingredients

  • 1 ripe banana
  • 4 pre-soaked dates
  • 1 small zucchini
  • 1/4 cup tahini
  • 2 tbsp coconut oil
  • 1 tbsp chia seeds
  • for non-vegan version)
  • 1 tbsp cacao powder
  • 1/4 cup chopped walnuts
  • 1/4 cup blueberries
  • 1/4 cup coconut flour
  • 1/2 cup almond or hazelnut flour
  • dash of cinnamon
  • dash of sea salt
  • 1 tsp baking soda

Preparation

  1. Blend banana, dates, zucchini, tahini and oil in a food processor

  2. Add to large bowl with flax eggs and mix well

  3. Stir in remaining ingredients until batter forms

  4. Pour into lightly oiled or lined muffin trays

  5. Bake at 350 degrees for 17-20 minutes or until baked through
