Lemon Blueberry Muffins
Ingredients
- 1/3 cup organic peanut butter
- 3 tbsp maple syrup
- 1/3 cup unsweetened almond milk
- 2 cups almond flour
- 1/2 lemon, juiced
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 cup blueberries
- Sea salt to sprinkle
Preparation
Mix maple, almond butter and almond milk in a large bowl, add remaining ingredients (blueberries last) and mix well
Pour into muffin tray and holders and top with a slice of banana (optional) and sea salt
Bake at 350 for 30-33 minutes
