Lemon Blueberry Muffins

Ingredients

  • 1/3 cup organic peanut butter
  • 3 tbsp maple syrup
  • 1/3 cup unsweetened almond milk
  • 2 cups almond flour
  • 1/2 lemon, juiced
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 cup blueberries
  • Sea salt to sprinkle

Preparation

  1. Mix maple, almond butter and almond milk in a large bowl, add remaining ingredients (blueberries last) and mix well

  2. Pour into muffin tray and holders and top with a slice of banana (optional) and sea salt

  3. Bake at 350 for 30-33 minutes

  4. Enjoy
