Easy Pumpkin Crumble Bars

Ingredients

Crumble

  • 90g oat flour
  • 90g almond flour
  • 100ml maple syrup
  • 100g almond butter
  • 1/2 tsp baking powder

Filling

  • 400g pumpkin
  • 150g dates
  • 2 Tbsp cornstarch
  • 1 tsp cinnamon

Preparation

  1. Place the dry ingredients for the crumble in a bowl and mix. Add in the maple and almond butter and use your hand to form a dough.

  2. Line a 20x20cm brownie tin with parchment paper and preheat the oven to 180°C/350°F.

  3. Take 3/4 of the dough and press it evenly into the bottom of the tin. Use the bottom of a glass or spatula to even out. Place in the oven and bake for 5 minutes, then set aside.

  4. In the meantime, add the filling ingredients to your high-speed blender and blend until smooth. Spread the filling over the bottom and even out. Take the remaining batter and crumble on top of the filling.

  5. Place back in the oven and bake for another 30 minutes until golden brown. Let cool down a bit before slicing.
