Spirulina Protein Muffins
Ingredients
- spirulina protein muffins
- 3 flax eggs
- 1/2 mashed banana
- 1 tbsp coconut oil
- 1/4 cup almond butter
- 1 tsp monk fruit or sweetener of choice
- 1 tbsp chia seeds
- 1/4 cup pumpkin seed powder (or protein powder)
- 1/4 cup hazelnut or almond flour
- baking soda
- sea salt
- cinnamon
- 1 tsp spirulina for the swirl
Preparation
Mix flax egg with butter, oil, nut butter until creamy
Add chia seeds, monk fruit, pumpkin seed powder, flour, baking soda, sea salt, and cinnamon
If batter is too thick, add a bit of water
Pour into muffin liners
Swirl Spirulina powder on top
Bake at 350 for 17-20 minutes or until cooked through
Topped with melty nut butter
