Blackberry Protein Bread
Ingredients
- 2 flax eggs
- 2 tbsp coconut oil
- 1/4 cup creamy almond butter
- 1/4 cup almond or cashew milk
- 1 tbsp maple syrup
- 1/2 tbsp monk fruit
- (or increase maple syrup to 3 tbsp)
- 1 scoop protein powder
- (I used plants & greens)
- 1/2 cup almond flour
- 1/2 cup fresh blackberries
- 1 tsp Baking soda
- 1 tsp sea salt
- 2 tbsp chopped pecans
Preparation
Mix flax eggs with melted coconut oil, almond butter, & milk, maple and monk fruit
Stir in flour, protein, blackberries, sea salt and baking soda
Spread into a lightly oiled bread pan
Sprinkle with pecans
Bake at 350 for 20 minutes or until the center is cooked
The center will continue to rise and cook through once you take it out of the oven and let it cool
