Buckwheat Brownie Banana Bread

Ingredients

  • 1 flax egg
  • 1 super ripe banana
  • 3 tbsp creamy almond butter
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp almond or coconut milk
  • 1 dash vanilla extract
  • 1/2 cup buckwheat or oat flour
  • 1 tbsp pumpkin seed powder or protein powder (optional)
  • 1 tsp baking soda
  • 3 tbsp extra dark chocolate chips
  • Sea salt to sprinkle

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. Blend all wet then dry ingredients in a food processor.

  3. Mix in chocolate chips in a large bowl.

  4. Line a baking pan with parchment paper or coconut oil.

  5. Pour in batter.

  6. Sprinkle sea salt and coconut shreds.

  7. Bake at 350 for 15 minutes or until browned and cooked through.
