Vegan Almond Butter Carrot Cake Blondies

Ingredients

  • 2/3 cup creamy almond butter
  • 1 flax egg (1 tablespoon flax seeds + 3 tablespoons water)
  • 1/4 cup maple syrup
  • 1 cup grated carrot
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup vegan mini chocolate chips

Preparation

  1. Mix together the flax egg in a bowl and let it sit for 5 minutes to thicken and gel.

  2. Once the egg mixture has set, add in the other ingredients except carrot and chocolate, and stir until you get a smooth combined batter.

  3. Add in the grated carrot.

  4. Fold in the chocolate chips, using part for the batter and saving some for the top.

  5. Spread the batter in a pan or loaf tin, then add extra chocolate chips and carrot shavings on top.

  6. Bake for 25 minutes at 350°F and cool for about 1 hour before cutting.
