Grain-Free Vegan Blondies

Ingredients

  • 1 1/4 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 flax egg (1 tablespoon ground flaxmeal + 3 tablespoons water, refrigerate to thicken)
  • 1/2 cup raw creamy almond butter
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • Vegan chocolate chips

Preparation

  1. Prep your flax egg and preheat the oven to 350°F first.

  2. Mix the dry ingredients in a small bowl and the wet ingredients in a medium bowl, then slowly combine the dry into the wet to make the batter.

  3. Add to an 8x8 pan, top with vegan chocolate chips, and bake for 28-30 minutes. Cool down for at least 10 minutes before cutting.
