Grain-Free Vegan Blondies
Ingredients
- 1 1/4 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 flax egg (1 tablespoon ground flaxmeal + 3 tablespoons water, refrigerate to thicken)
- 1/2 cup raw creamy almond butter
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- Vegan chocolate chips
Preparation
Prep your flax egg and preheat the oven to 350°F first.
Mix the dry ingredients in a small bowl and the wet ingredients in a medium bowl, then slowly combine the dry into the wet to make the batter.
Add to an 8x8 pan, top with vegan chocolate chips, and bake for 28-30 minutes. Cool down for at least 10 minutes before cutting.
