Banana Buckwheat Waffle Sandwich
Ingredients
- 1 flax egg
- 1/2 mashed banana
- 1/4 cup buckwheat or oat flour
- 2 tbsp almond flour
- 1/2 - 1 scoop protein powder
- 1/4 cup almond milk
- 1 tbsp coconut oil
- 1/2 tbsp maple syrup
- 1 tsp Baking soda
Preparation
Makes 1)
Mix all wet ingredients in a large bowl
Add dry ingredients and mix until thick batter forms
If it’s too thick (like dough), add more almond milk or water
Pour into a lightly oiled waffle maker (I bought a small one from amazon) and cook until fluffy
I cut it in half and spread the Nut butters on each side, added a bit of raw Manuka honey and sliced strawberries
