Banana Buckwheat Waffle Sandwich

Ingredients

  • 1 flax egg
  • 1/2 mashed banana
  • 1/4 cup buckwheat or oat flour
  • 2 tbsp almond flour
  • 1/2 - 1 scoop protein powder
  • 1/4 cup almond milk
  • 1 tbsp coconut oil
  • 1/2 tbsp maple syrup
  • 1 tsp Baking soda

Preparation

  1. Makes 1)

  2. Mix all wet ingredients in a large bowl

  3. Add dry ingredients and mix until thick batter forms

  4. If it’s too thick (like dough), add more almond milk or water

  5. Pour into a lightly oiled waffle maker (I bought a small one from amazon) and cook until fluffy

  6. I cut it in half and spread the Nut butters on each side, added a bit of raw Manuka honey and sliced strawberries
