Lemon Lavender Vegan Shortbread Tea Cookies

Ingredients

  • 1 cup earth balance butter
  • 1/2 cup powdered sugar
  • 2 cups flour
  • 1 teaspoon culinary grade lavender
  • lemon zest from one lemon
  • 1 tablespoon lemon juice

Preparation

  1. Preheat oven to 350 degrees.

  2. Finely chop culinary lavender to release the flavor.

  3. Zest lemon and squeeze to yield a tablespoon of the juice.

  4. Stir into the mixture and add more lemon if desired.

  5. Cream butter and sugar, then slowly stir in flour.

  6. Bake for 12-15 minutes at 350 degrees.

  7. Serve with tea.
