No Bake Chocolate Peanut Butter Cookies
Ingredients
- 100 g dark chocolate
- 120 ml milk
- 25 g cocoa powder
- 150 g sugar
- 1 tbsp vanilla extract
- 110 g butter
- 100 g creamy peanut butter
- 200 g roasted unsalted peanuts
- 60 g coconut flakes
- 100 g chopped almonds
- 200 g crunchy oat cookies
Preparation
Line a baking sheet (approximately 30 cm by 40 cm) with parchment paper
Finely chop the dark chocolate
Place the chopped dark chocolate, milk, cocoa powder, sugar, and vanilla extract in a small saucepan
Melt over medium heat, stirring constantly until smooth
Stir in the butter and peanut butter until melted and well combined
Coarsely chop the roasted peanuts
Stir the chopped peanuts, coconut flakes, chopped almonds, and crunchy oat cookies into the chocolate mixture
Drop by teaspoonfuls onto the prepared baking sheet
Refrigerate for 30 minutes until set
Store in the refrigerator for up to 2 days
Tips
If you don't have chopped almonds or coconut flakes, substitute with chopped hazelnuts or walnuts
