Easy Microwave Crunchy Biscoff Pudding

- 90g crunchy Biscoff Spread
Sponge
- 120g softened butter
- 70g sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 90g Crunchy Biscoff Spread
- 120g self raising flour
- 2 tbsp milk
Preparation
Grease a microwaveable bowl and add the Biscoff for the topping, then microwave on full power for 1 minute, spread it around the bottom of the bowl, and set aside to cool.
Beat the butter and sugar together until light and fluffy, then beat in the eggs one at a time, microwave the second lot of Biscoff for 30 seconds, add it along with the vanilla extract, and fold in the flour and milk to make a thick batter.
Spoon the batter onto the Biscoff in the bowl, level it off, cover with clingfilm, microwave on high for 5 minutes and 30 seconds, let it rest for 1 minute, then turn out onto a plate and serve.
