Easy Microwave Crunchy Biscoff Pudding

Ingredients

Topping

  • 90g crunchy Biscoff Spread

Sponge

  • 120g softened butter
  • 70g sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 90g Crunchy Biscoff Spread
  • 120g self raising flour
  • 2 tbsp milk

Preparation

  1. Grease a microwaveable bowl and add the Biscoff for the topping, then microwave on full power for 1 minute, spread it around the bottom of the bowl, and set aside to cool.

  2. Beat the butter and sugar together until light and fluffy, then beat in the eggs one at a time, microwave the second lot of Biscoff for 30 seconds, add it along with the vanilla extract, and fold in the flour and milk to make a thick batter.

  3. Spoon the batter onto the Biscoff in the bowl, level it off, cover with clingfilm, microwave on high for 5 minutes and 30 seconds, let it rest for 1 minute, then turn out onto a plate and serve.
