Brazilian Bread Pudding with Guava Paste
Ingredients
- 2 cups stale bread cubes
- 1 cup milk
- 3 eggs
- 2 cups milk
- 1 can sweetened condensed milk
- 1 small carton heavy cream
- Vanilla extract to taste
- 1/2 cup guiva paste, cut into chunks
Caramel sauce
- 1 scant cup sugar
- 1/3 cup water
Preparation
Place the stale bread cubes in a bowl with 1 cup milk and let soak for 10 to 15 minutes until softened but not mushy
Make caramel in the bottom of a pudding mold by heating sugar over medium heat until melted, then stir in 1/3 cup water and cook until smooth
Spread the caramel evenly in the mold, then layer the soaked bread cubes and guava paste chunks
Blend 2 cups milk, eggs, sweetened condensed milk, heavy cream, and vanilla extract until smooth
Pour the custard mixture over the bread and guava paste, cover with foil, and bake in a water bath at 180Β°C (350Β°F) for 1 hour
Remove the foil and bake for an additional 15 minutes until the top is golden
Tip
Place the pudding mold inside a larger pan filled with hot water and a slice of lemon for the water bath
