Brazilian Bread Pudding with Guava Paste

Ingredients

  • 2 cups stale bread cubes
  • 1 cup milk
  • 3 eggs
  • 2 cups milk
  • 1 can sweetened condensed milk
  • 1 small carton heavy cream
  • Vanilla extract to taste
  • 1/2 cup guiva paste, cut into chunks

Caramel sauce

  • 1 scant cup sugar
  • 1/3 cup water

Preparation

  1. Place the stale bread cubes in a bowl with 1 cup milk and let soak for 10 to 15 minutes until softened but not mushy

  2. Make caramel in the bottom of a pudding mold by heating sugar over medium heat until melted, then stir in 1/3 cup water and cook until smooth

  3. Spread the caramel evenly in the mold, then layer the soaked bread cubes and guava paste chunks

  4. Blend 2 cups milk, eggs, sweetened condensed milk, heavy cream, and vanilla extract until smooth

  5. Pour the custard mixture over the bread and guava paste, cover with foil, and bake in a water bath at 180Β°C (350Β°F) for 1 hour

  6. Remove the foil and bake for an additional 15 minutes until the top is golden

Tip

  1. Place the pudding mold inside a larger pan filled with hot water and a slice of lemon for the water bath
