Easy No-Bake Brazilian Gelatin Pudding

Ingredients

  • 1 (14-ounce) can sweetened condensed milk
  • 1 (7 fl oz) box heavy cream, chilled
  • 1 cup milk
  • 1 package unflavored gelatin

Caramel

  • 3 tablespoons sugar

Preparation

  1. Hydrate the unflavored gelatin in 2 tablespoons cold water for 5 minutes, then dissolve in the warm milk

  2. In a blender, combine sweetened condensed milk, heavy cream, and the gelatin mixture; blend until smooth

  3. In a pudding mold, place sugar and heat over medium-low heat, stirring constantly, until dissolved and caramelized; pour to coat the bottom and sides

  4. Pour the blended mixture into the mold

  5. Freeze for 1 hour; run a wet knife around the edge, then invert to unmold; serve immediately; store leftovers in the refrigerator

Tips

  1. This pudding sets firm and beautiful after 1 hour in the freezer and is less sweet than traditional baked pudim

  2. You can use flavored gelatin and top with fresh fruit after unmolding
