Peanut Butter and Jelly Cookies
Ingredients
- 1 flax egg (3 tablespoons water + 1 tablespoon flax seed)
- 3 tablespoons maple syrup or honey
- 1/2 cup creamy peanut butter
- 1/2 cup oat flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon baking soda
- dash of salt
Blueberry chia jam
- 2 cups blueberries
- 1 tablespoon chia seeds
- 2 tablespoons water
Preparation
Preheat your oven to 350ºF.
Make your flax egg and chill in the fridge.
If you don't have a berry jam ready made, this is the time to do it.
In a pot, add in 2 cups berry of choice and water.
Simmer for about 3-5 minutes on low heat until the berries soften and burst.
Add in chia seeds and give it a good stir until the mixture begins to thicken to a jam consistency.
Chill the jam in the fridge while you make your cookies.
For the cookies, mix all the wet ingredients in a bowl and dry in another.
Add wet into dry until well combined.
Spoon out 1 tablespoon of dough and roll into a ball and use your finger to push down the center to create a cavity for your jam.
Bake for about 11 minutes and allow to cool and enjoy.
