Peanut Butter and Jelly Cookies

Ingredients

  • 1 flax egg (3 tablespoons water + 1 tablespoon flax seed)
  • 3 tablespoons maple syrup or honey
  • 1/2 cup creamy peanut butter
  • 1/2 cup oat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • dash of salt

Blueberry chia jam

  • 2 cups blueberries
  • 1 tablespoon chia seeds
  • 2 tablespoons water

Preparation

  1. Preheat your oven to 350ºF.

  2. Make your flax egg and chill in the fridge.

  3. If you don't have a berry jam ready made, this is the time to do it.

  4. In a pot, add in 2 cups berry of choice and water.

  5. Simmer for about 3-5 minutes on low heat until the berries soften and burst.

  6. Add in chia seeds and give it a good stir until the mixture begins to thicken to a jam consistency.

  7. Chill the jam in the fridge while you make your cookies.

  8. For the cookies, mix all the wet ingredients in a bowl and dry in another.

  9. Add wet into dry until well combined.

  10. Spoon out 1 tablespoon of dough and roll into a ball and use your finger to push down the center to create a cavity for your jam.

  11. Bake for about 11 minutes and allow to cool and enjoy.
