Easy Vegan Blueberry Crumble Bars

Ingredients

Blueberry crumble bars

  • 1 cup oat flour
  • 3/4 cup oats
  • 1 mashed banana
  • 2 tablespoons peanut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Blueberry chia jam

  • 2 cups blueberries
  • 2 tablespoons chia seeds
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 tablespoon honey

Preparation

Preparing chia jam

  1. Heat up a small pot over stove top and make your chia jam.

  2. Add in all the ingredients into a pot and mix well with a wooden spoon.

  3. Simmer for about 8-10 minutes until it reaches a thick jam consistency.

Making crumble bars

  1. Preheat your oven to 350ºF.

  2. Mix all the wet ingredients in one bowl and dry in another.

  3. Add dry into wet and use your hands to combine all the ingredients.

  4. You should have a thick dough like batter.

  5. If the batter is too dry, add in one tablespoon of non dairy milk at a time.

  6. Reserve about 1/2 or 3/4 cup of the dough for the crumble layer on top later and press the remainder of the dough into a square baking pan greased and lined with parchment paper.

  7. Spread the blueberry chia jam on top of the dough and sprinkle the reserved crumble from earlier on top of the jam and bake for 22-25 minutes or until golden brown.

  8. Allow the bars to cool and slice and enjoy.
