Precious Pink Oreo Cookies
Ingredients
- 1 cup GF flour
- 1/3 cup cacao powder
- 1/4 cup coconut sugar
- 1/3 cup coconut oil
- 1 tsp vanilla bean extract
Frosting
- 110g cashews, soaked overnight
- 140g coconut cream
- 60g maple syrup
- 1 tsp vanilla extract
- 30g raw cocoa butter
- 1 tsp pink pitaya powder
- Pinch of pink salt
Preparation
Preheat oven to 175°C
Put all the ingredients in a bowl
Whisk the mixture until it reaches a dough-like consistency
Cover the cookie dough and refrigerate for 10 minutes
Blend everything except the cocoa butter in a food processor
Slowly add the cocoa butter while continuing to blend
Refrigerate for 4 hours before use
Roll out the dough and cut out cookies using a circle cookie cutter
Place the cookies on a baking sheet leaving a few inches gap between them
Bake in the oven for 15 minutes
Set aside to cool before assembling the cookie sandwich
Take out the frosting and give it a nice stir
