Precious Pink Oreo Cookies

Ingredients

  • 1 cup GF flour
  • 1/3 cup cacao powder
  • 1/4 cup coconut sugar
  • 1/3 cup coconut oil
  • 1 tsp vanilla bean extract

Frosting

  • 110g cashews, soaked overnight
  • 140g coconut cream
  • 60g maple syrup
  • 1 tsp vanilla extract
  • 30g raw cocoa butter
  • 1 tsp pink pitaya powder
  • Pinch of pink salt

Preparation

  1. Preheat oven to 175°C

  2. Put all the ingredients in a bowl

  3. Whisk the mixture until it reaches a dough-like consistency

  4. Cover the cookie dough and refrigerate for 10 minutes

  5. Blend everything except the cocoa butter in a food processor

  6. Slowly add the cocoa butter while continuing to blend

  7. Refrigerate for 4 hours before use

  8. Roll out the dough and cut out cookies using a circle cookie cutter

  9. Place the cookies on a baking sheet leaving a few inches gap between them

  10. Bake in the oven for 15 minutes

  11. Set aside to cool before assembling the cookie sandwich

  12. Take out the frosting and give it a nice stir

  13. Start stacking the Oreo cookies
