Bang Bang Enoki Mushrooms

Ingredients

  • 3 small packs enoki mushrooms
  • 1.5 cups all purpose flour
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1.5 tsp black pepper
  • 2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup cornstarch
  • 1.5 cups sparkling water, unflavored
  • Vegetable oil for frying

Bang bang sauce

  • 1/2 cup kewpie mayo
  • 1/4 cup Thai sweet chili sauce
  • 3 tbsp sriracha (adjust to your liking)

Preparation

  1. Slice the enoki mushrooms lengthwise into strips.

  2. Mix the bang bang sauce ingredients together and set aside until ready to use.

  3. Put the batter ingredients in a bowl and mix until well combined.

  4. Drench the enoki mushrooms in the batter and tap to remove any excess batter. Fry in batches until crispy and golden, about 5 minutes, and make sure not to burn them.

  5. Place the fried enoki mushrooms in a bowl and either pour the sauce over them or serve with the sauce as a dip.
