Crispy Fried Enoki Mushrooms
Ingredients
- 2 packs enoki mushrooms (can substitute with oyster mushrooms)
- 100g all-purpose flour
- 50g white rice flour
- 1 tsp cornstarch
- 1 tsp salt
- 3/4 tsp baking powder
- 1/2 tsp stock powder
- 1/4 tsp pepper
- ice water (4 tbsp for batter)
Preparation
Trim the roots of the enoki mushrooms, wash them thoroughly, and separate into strands.
Mix together the dry ingredients: all-purpose flour, rice flour, cornstarch, salt, baking powder, stock powder, and pepper.
For the batter, combine 4 tablespoons of the dry mix with 4 tablespoons of ice water and stir until smooth.
Coat the mushroom strands evenly in the batter.
Then, dredge them in the remaining dry mix, pressing gently to ensure it adheres well.
Fry in plenty of oil over medium heat until golden brown.
Serve hot with your favorite sauce.
